Some nights, we love to be able to make an easy dinner in under half an hour, and this super simple 3-step prawn curry recipe will let you do just that while keeping you full and content!
What You Will Need
1-2 tablespoons curry paste
200ml light coconut milk
400g Italian chopped tomatoes
1-2 teapoons curry powder
Half red onion
1 teaspoon chilli powder (optional)
Heat a bit of oil in a pan and add in half a diced red onion and a cube of finely diced ginger. Cook for 1 minute and mix in the curry paste and curry powder. Cook for 1 minute more.
Pour in 200ml of coconut milk and 400g of chopped tomatoes and cook for 5 minutes, stirring frequently. Add in the chilli powder if you’d like a spicer meal.
Stir in the prawns and cook for 5 more minutes. Et voila! Ready to serve with cooked rice and garnished with coriander.
